Cut beef into 4 smaller pieces (about the size of a burger patty). Blend chips finely and dip each beef piece in cassava flour, flax or egg, then chip coating.
Heat oil over medium-high heat and cook milanesas until golden brown and crisp. Drain in a paper towel and sprinkle with extra sea salt.
Heat burrito tortilla over medium-high heat on each side for 10-15 seconds.
Add mayo, 1-2 pieces of milanesa, lettuce, sliced tomatoes, avocado, and sliced pickled jalapeños.
Wrap each end of the burrito inward. Sear on a medium-high skillet on both sides. Cut in half and serve.
